Souvla, Cypriot Traditional Food.

The photograph depicts the national food of Cyprus - Souvla, being cooked.

The dish consists of large chunks of meat cooked over charcoal on a skewer.  The meat could either be lamb, pork or baby goat (kid) which has been marinated with salt and some herbs such as oregano. Cold pressed virgin olive oil with maybe a little wine is also added to enhance the cooking and eventual taste.  Flavourings can vary depending upon the specific area of the island.

Souvla is the traditional food eaten at times of celebration and festivities, however driving through villages on a Sunday, one will more than likely catch the aromas drifting on the breeze making even the most vegetarian of stomachs have a little rumble!

Many families will prepare this dish most Sundays and very often it is the men of the family that will do the cooking as head of the household. The women of course will have prepared everything beforehand and will naturally do the washing up; however many men are happy to take the glory for the whole event!
